I have a client that is interested in monitoring their employees web activity (they make the employees well aware they are doing this).  Is there any way to do this with a monowall?

ideally what they'd like to be able to do is pull up the web traffic for a particular ip address or hostname...

No.  You will need another package.

You may want to look at pfSense and use the squid module in there.  With a squid log analyser you'll get all that, and you'll have proxy and caching services.

pfSense can read your m0n0wall config (since it's based on m0n0wall) so it's easy to migrate.

Depending one how much activity you want to track. OpenDNS offers some basic tracking and site blocking.
