Is there a way to do 1:1 NAT configuration with a dynamic PPPoE WAN?  I'm trying to emulate the "DMZ port" function on most commercial routers but with a PPPoE WAN, I can't see to set up 1:1 NAT because it asks for an IP address which is ever changing.

Not with 1:1 NAT, no. That's only for static IPs. You can forward port ranges with inbound NAT to get all TCP and UDP traffic through, though that won't help for other protocols (you may not care though).
