Is there anyone that have done some tests regarding throughput in transparent (bridged) mode?
Is it possible (with the right hw) to reach 1GB thoughput?

Sure, it's possible. I don't know of anyone that's done any specific testing of bridging for that high of throughput. For full gig speeds, I would guess you'll need a 3 GHz machine or better to leave a little breathing room.

And you'll need something with PCI-e or PCI-X NIC's if you need the full gig wire speed, since a regular PCI bus is only going to get you ~500 Mb before you're maxing out the capabilities of the PCI bus. I would suggest PCI-X for best compatibility, I don't think any PCI-e NIC's are supported in m0n0wall 1.2x.
