I have usb ethernet cards on a small form factor dell that'd be perfect for this implementation if it weren't that m0n0 doesn't support it...drag!

Depending on the how powerful your Dell machine is and the type of USB adapters, pfSense may support them.  pfSense is kind of m0n0wall's big brother, maybe not as easy to set up and takes a bit more resources, but not all that different.  And can support some USB NICs.

1.8 has more nic support.  Try one of the betas.
