We use m0n0wall at our office and we have remote sites with dynamic IP, so VPN stops when remote gateway IP changes.  Unfortunately m0n0wall does not permit to enter a name instead of an IP as remote address. This would permit the use of dynDNS for remote sites! Do you have suggestions for alternative configurations or plans for a upgrade?

yeah I do have a suggestion. If you use a connection like SBC DSL or time warner cable your in luck. Time Warner and SBC DSL will only lose their IP if the modem is restarted or powered down. If the modem is a new series modem with digital phone ability, it will have a intergrated battery backup, which will keep you from the loss of an IP. I currently have two sites that I have a constant IPsec VPN tunnel to that are on dynamic IP's. They have been running for about 7 months now without any issues of the IP releasing. If you have SBC or time warner for a service, use a battery backup for the modem. That way if any powerloss issue rise the modem won't power down and lose it's IP. I know this is not the best solution other than getting a static IP, but hey we work with what we have right!!!. Hope this helps.
