Hello, I am going to be running m0n0 on a 1.8ghz 1gb ram, on a 2gb usb flash drive.

My main reason for using this is having a router/firewall that wont freeze up when it gets a big DDoS'd (Distributed Denial of Service) attack. I have a fiberoptic line, 50mb down and 5mb up.

Would having a very fast m0n0wall act a router/firewall with the DDoS set to "block" on the firewall settings supress the DDoS better then a Linksys WRT54G?

A box of that spec will definitely perform a LOT better than a Linksys. Make sure you don't log the blocked DDoS traffic, as that'll just unnecessarily bog things down (may or may not matter, but it's unnecessary, and log noise you don't want).
