I did a scan using nmap, and it came back with details of which software, operating system, and version of monowall I'm using. This is on a CF card. Is there a way to block that kind on info from port sniffers?

I doubt it. The TCP/IP stack in almost all systems has certain signatures that allow identifying the OS.
